Regional specialities: the taste of Koksijde
Together with Oostduinkerke, Nieuwpoort and De Panne, Koksijde forms the epicentre of shrimp fishing, and that tradition is very much on the plate: the grey shrimp and the Westhoek hinterland full of farm produce give the local cuisine its flavour.
- Shrimp from the horseback fishermen: in the district of Oostduinkerke, the famous horseback fishermen still ride into the surf to catch shrimp, a tradition recognised by UNESCO. That fresh grey shrimp is at its best here in an artisanal shrimp croquette or classically in a tomato.
- Farm produce from the Westhoek: the fertile hinterland yields genuine regional treats, such as the creamy cheese of the Beauvoordse Walhoeve, white sausage from Veurne and artisanal pâté, often found on menus and with beer tapas.
- Abbey beer at Ten Bogaerde: on the historic site of Ten Bogaerde, the Sint-Idesbald house brewery brews local, internationally awarded beer, which you can taste there with regional products and a view over the abbey farm.
- From starred kitchens to bistros: Koksijde nurtures a strong culinary tradition, thanks in part to the renowned hotel school Ter Duinen, with addresses ranging from refined cuisine to convivial bistros cooking with fresh, local produce.
